  • 2 cups store-bought chicken dumplings
  • 8 oz udon noodles

  • 1 tablespoon soy sauce
  • 1 cup shiitake mushrooms sliced
  • 1 teaspoon garlic paste
  • 2 cups bok choy chopped
  • 1 tablespoon sesame seeds
  • 1 tablespoon chili crunch optional, for spice
  • 2 green onions sliced (for garnish)

Instructions

  • Prepare the Stock: In a large pot, bring the chicken stock to a simmer over medium heat. Stir in the soy sauce and garlic paste, letting the flavors meld for about 2-3 minutes.
  • Cook the Mushrooms: Add the sliced shiitake mushrooms to the broth and let them simmer for 5 minutes until they soften and release their flavor into the broth.
  • Add the Dumplings and Noodles: Carefully place the chicken dumplings and udon noodles into the pot. Cook for 5-7 minutes, or until the dumplings are cooked through and the noodles are tender.
  • Incorporate the Bok Choy: Stir in the chopped bok choy and let it cook for an additional 2-3 minutes until it wilts but remains bright green.
  • Finish and Serve: Ladle the soup into bowls, ensuring each bowl gets a mix of dumplings, noodles, mushrooms, and bok choy. Top with sesame seeds, a drizzle of chili crunch for a bit of heat (if using), and a sprinkle of sliced green onions.

Notes
