Brown Butter Candied Yams

Ingredients

  • 2 lbs sweet potatoes peeled and cut into 1-inch rounds
  • 1 tbsp olive oil
  • 1 tsp Kosher salt

For Brown Butter Glaze

  • 4 tbsp salted butter
  • 4 tbsp pure maple syrup
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1/4 tsp nutmeg
  • 1 tsp cinnamon

Instructions

  • Preheat and Prep:Preheat your oven to 375°F (190°C) and grease a large baking dish. This will be the canvas for your delicious creation.
  • Prepare the Sweet Potatoes:Peel, wash, dry and slice sweet potatoes and place in a baking dish. Drizzle with olive oil and season with salt then cover tightly with foil and bake for 35-40 minutes, until fork tender
  • Brown that Butter & Make Glaze:In a saucepan over medium low heat, melt the butter. Keep a close eye on it, swirling occasionally, until it turns a beautiful golden brown color and releases a nutty aroma. This will take about 3-5 minutes. Add maple syrup, vanilla, nutmeg and sugar. Turn off heat and set aside.
  • Marry the Sweet Potatoes and Butter Mixture:Once sweet potatoes are tender, pour the luscious brown butter concoction over them and toss until well coated
  • Back into the Oven:Increase heat to 400 and pop the dish back into the oven uncovered and bake for 10 minutes, or until the sweet potatoes are sticky and caramelized, with the edges slightly crispy
