Cajun Chicken and Shrimp Fettuccine Alfredo

This Chicken and Shrimp Fettuccine Alfredo will make you look like a seasoned chef. Your date will be wondering when you secretly attended cooking school!

Ingredients

  • 16 oz fettuccine noodles cooked according package instructions
  • 1 lb chicken breast diced or cut into thin strips
  • 1 lb large shrimp peeled, deveined and tails removed
  • 3 tbsp olive oil divided (1 tbsp to season shrimp, 1 tbsp to season chicken, 1 tbsp to sear shrimp)
  • 2 tbsp creole seasoning
  • 2 tbsp blackening seasoning
  • 2 tsp garlic salt
  • Kosher salt to taste

For sauce

  • 2 tbsp Kerrygold garlic and herb butter
  • 1 small shallot finely diced
  • 1 tbsp garlic minced
  • 4 cups of heavy cream
  • 2 cups parmesan cheese
  • 1 tsp cajun seasoning
  • 1 tsp all purpose seasoning of choice
  • Kosher salt to taste if desired
  • Fresh parsley as desired

Instructions

  • Cook pasta according to package instructions, drain and set aside
  • Season shrimp in one bowl with olive oil and half of seasoning blend then set aside
  • Season chicken in another bowl with olive and the other half of the seasoning blend and set aside
  • Cook chicken in air fryer on 400 for 12 minutes flipping half way through until cooked through and golden brown
  • While chicken cooks, sear shrimp in a large skillet with 1 tbsp of olive oil
  • Cook shrimp on each side for 2 minutes
  • Remove shrimp and set aside
  • To the same skillet on medium heat, melt garlic and herb butter and saute shallot and garlic until fragrant, about 1 minute
  • Add heavy whipping cream and whisk well to combine
  • Turn heat to medium low and bring to a simmer
  • Add parmesan cheese little by little, whisking until melted
  • Season to taste with cajun seasoning and all purpose seasoning
  • Add fresh parsley as desired
  • Once sauce has simmered and thickened, after about 10 minutes, add pasta a little at a time until well coated in the suace
  • Turn off the heat and allow the pasta to soak up the sauce
  • Top the pasta with the cooked shrimp and cooked chicken, mixing well to combine
  • Top with more parmesan cheese and parsley as desired

Notes

If you like the pasta saucier use less noddles, about 8-9oz as desired instead of the entire box
