Cajun Shrimp Skillet Nachos

Ingredients

  • 1/2 lb medium shrimp peeled, deveined and tails removed
  • 1 tbsp olive oil
  • 1 tsp cajun or seafood seasoning of choice
  • Kosher salt to taste
  • 1 tbsp butter *for sautéing shrimp
  • 1/2 bag of your favorite tortilla chips
  • 1 cup of Mexican cheese blend + more as desired
  • 1/2 cup black beans drained

Toppings

  • Avocado
  • Sour Cream
  • Salsa
  • Lime
  • Cilantro
  • Jalapeño for spice

Instructions

  • In a bowl, season shrimp with olive oil, cajun seasoning and salt
  • To a skillet on medium heat, melt butter an sauté shrimp until just cooked, about 4 minutes
  • Remove shrimp and set aside
  • To a cast iron skillet, add a layer or chips, followed by cheese, black beans and cheese
  • Repeat the layering until you get to the top of the skillet
  • The final layer should be cheese
  • Broil until cheese is melted, about 2-3 minutes
  • Top with desired toppings, serve warm and enjoy
