Ingredients

  • 1 large cooked rotisserie chicken breast diced
  • 1 cup cooked rice
  • 2 cups frozen broccoli
  • 1 can cream of chicken soup with herbs
  • 1/2 cup whipped cream cheese
  • Salt and pepper to taste
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1 cup sharp cheddar cheese shredded
  • 1/2 cup Colby Jack cheese shredded (for topping)
  • 1/2 cup crispy fried onions for topping
  • 1/3 cup milk to mix everything together easily

Instructions

  • Preheat Oven: Preheat your oven to 375 degrees and lightly grease a casserole dish.
  • Mix Ingredients: In a large mixing bowl or straight into the casserole dish combine the diced chicken, cooked rice, frozen broccoli, cream of chicken soup, whipped cream cheese, and seasonings (salt, pepper, onion powder, garlic powder, Italian seasoning, smoked paprika). Mix well to ensure everything is coated evenly. Add milk to mix everything together easily
  • Add Cheese: Stir in the shredded sharp cheddar cheese until fully incorporated.
  • Assemble Casserole: Transfer the mixture into the prepared casserole dish. Spread it out evenly.
  • Top with Cheese & Crispy Onions: Sprinkle the Colby Jack cheese on top as well as the crispy onions
  • Bake: Bake uncovered in the preheated oven for 25-30 minutes, or until the cheese on top is melted and bubbly.
  • Serve: Let the casserole cool slightly before serving. Enjoy!
