Ingredients

For Chicken Thighs

  • * 6 large organic bone-in chicken thighs trimmed of fat and extra skin
  • * 1 tsp of Knorr chicken bouillon powder
  • * 1 tsp onion powder
  • * 1 tsp garlic powder
  • * 1 tsp herbs de provence
  • * Salt and Pepper to taste
  • * 1 tbsp of olive oil

For Sauce

  • * 1 tbsp of garlic minced
  • * 1 small onion diced
  • * 1 1/2 cups of heavy cream
  • * 1 tsp of Knorr chicken bouillon powder
  • * 2 cups of fresh spinach plus more if desired
  • * 1 cup of freshly grated Parmesan cheese
  • * Fresh sprigs of rosemary if desired

Instructions

  • Heat oven 375 degrees
    In a medium bowl, season chicken ensuring you are getting the seasoning under the skin, drizzle with olive oil to ensure seasoning sticks to the chicken
  • Heat a medium cast-iron pan on medium high heat
  • Sear the chicken thighs, skin side for 5-7 minutes per side until golden brown
  • Remove chicken from pan and set aside on a plate to rest
  • In the same pan to the rendered chicken fat, add onions and sweat for 2-3 minutes until fragrant
  • Add garlic and sauté for 30 seconds
  • Add spinach and allow it to cook until slightly wilted
  • Add heavy cream, parmesan cheese and Knorr chicken bouillon powder to taste
  • Allow the sauce to come to begin to bubble, about 3-5 minutes
    Add chicken back to the sauce and spoon the sauce over the top of the chicken
  • Turn off the heat and add skillet to the oven, uncovered for 30-40 minutes or until internal temperature registers 165 degrees
  • Remove from oven and serve hot with creamy mashed potatoes

Notes

Chicken thighs vary in size, cook time is based off small, organic chicken thighs. If you have larger chicken thighs they can take up to an hour to cook
