  • 1 lb cod fillet fresh or thawed from frozen
  • 1/3 cup olive oil
  • 1/2 lemon juiced + zest
  • 1 tbsp garlic paste or 2 cloves minced garlic
  • 1 tbsp chopped fresh parsley
  • 1 tsp all-purpose seasoning like Lawry’s or Goya
  • 1 tsp smoked paprika
  • Kosher salt to taste
  • Seafood seasoning optional
  • Lemon slices for baking

    Notes

    1. Preheat your oven to 400°F and position the rack in the top third of the oven to ensure even cooking and a nice golden finish.
    2. Line a baking dish with lemon slices to create a flavorful base for your cod. This not only prevents sticking but also infuses the fish with fresh citrus flavor.
    3. In a small bowl, whisk together olive oil, lemon juice and zest, garlic paste, chopped parsley, all-purpose seasoning, smoked paprika, and kosher salt to taste.
    4. Place the cod fillet on top of the lemon slices in the baking dish.
    5. Pour the marinade over the fish and use a brush or spoon to ensure it’s evenly coated.
    6. Bake the cod at 400°F for 20 minutes. The fish should flake easily with a fork when it’s done.
    7. For an extra golden, slightly crispy finish, broil the cod for the last 2 minutes of cooking.
