Ingredients
26 oz steamed lobster tails, chopped
1small shallotsautéed
4oz1/2 block cream cheese, softened
1cupwhite cheddar cheese or Italian blend cheese
1/3cupsour cream
2tbspmayo
Season to taste with favorite seafood seasoning like old bay
Salt and pepper to taste
Instructions
Preheat & Prep: Preheat your oven to 375°F. Lightly grease a small baking dish.
Sauté the Shallots: In a pan over medium heat, sauté the shallot with a little butter or oil until softened and fragrant. Set aside.
Mix the Base: In a bowl, combine cream cheese, white cheddar (or Italian blend cheese), sour cream, and mayo. Season to taste with old bay, salt and pepper. Stir until smooth and well incorporated.
Add the Lobster: Gently fold in the chopped steamed lobster and sautéed shallots.
Transfer to Baking Dish: Spread the mixture into the prepared baking dish.
Make the Topping: In a small pan, toast the panko breadcrumbs with melted butter until golden brown. Sprinkle evenly over the dip.
Bake & Serve: Bake for about 15 minutes, or until bubbly and warmed through. Serve hot with toasted crostinis.
