Easy Fish Piccata

Ingredients

  • 1 lb thinly sliced flounder filets
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Kosher salt and pepper to taste
  • 1/4 cup of flour for dusting the fish lightly

For sauce

  • 3 tbsp of capers + 1 tbsp of caper brine
  • 3 tbsp butter
  • 1 tbsp garlic paste
  • 1/2 cup white wine more if you like more sauce
  • 1/2 a lemon juiced, the other half sliced for garnish
  • Fresh parsley about 2 tbsp chopped
  • 2 tbsp of olive oil for searing fish
  • Serve with fresh parmesan cheese if desired

Instructions

  • Pat fish dry and season with spice blends
  • Lightly dust the filets of fish with flour
  • In a nonstick skillet, heat olive oil on medium heat
  • Sear fish in batches until golden brown, about 2 minutes per side
  • Remove fish and set aside
  • To the same skillet, melt butter and add garlic and capers
  • Saute for one minute, then deglaze with white wine and bring to a simmer for another minute
  • Add lemon juice and stir to combine
  • Add fresh parsley and season to taste with salt and pepper (you won't need much salt because capers are quite salty)
  • One sauce as reached the desired consistency add fish back to the sauce and baste the fish with the sauce
  • Do this for a minute until the sauce has thickened further
  • Turn off the heat and serve warm over angel hair pasta

I loved this with angel hair pasta and roasted veggies!
