Easy Fish Piccata

Ingredients

lb
thinly sliced flounder filets
1
tsp
garlic powder
1
tsp
paprika
Kosher salt and pepper to taste
1/4
cup
of flour for dusting the fish lightly
For sauce
3
tbsp
of capers + 1 tbsp of caper brine
3
tbsp
butter
1
tbsp
garlic paste
1/2
cup
white wine
more if you like more sauce
1/2
a lemon
juiced, the other half sliced for garnish
Fresh parsley
about 2 tbsp chopped

tbsp
of olive oil for searing fish
Serve with fresh parmesan cheese if desired
Instructions
Pat fish dry and season with spice blends
Lightly dust the filets of fish with flour
In a nonstick skillet, heat olive oil on medium heat
Sear fish in batches until golden brown, about 2 minutes per side
Remove fish and set aside
To the same skillet, melt butter and add garlic and capers
Saute for one minute, then deglaze with white wine and bring to a simmer for another minute
Add lemon juice and stir to combine
Add fresh parsley and season to taste with salt and pepper (you won't need much salt because capers are quite salty)
One sauce as reached the desired consistency add fish back to the sauce and baste the fish with the sauce
Do this for a minute until the sauce has thickened further
Turn off the heat and serve warm over angel hair pasta
Notes
I loved this with angel hair pasta and roasted veggies!
