Ingredients

  • 1 lb Boneless skinless chicken thighs
  • 2 tbsp Avocado oil
  • 1 tbsp Smoked paprika
  • 1 tbsp All purpose seasoning
  • 1 tbsp Green seasoning
  • Salt and pepper to taste
  • Green onion for garnish

For the Green Sauce:

  • 1/2 a Ripe avocado
  • 1 bunch of Fresh cilantro
  • 1/2 cup Greek yogurt or Mayo
  • 1 Jalapeño seeds removed
  • Salt to taste

Instructions

  • Preheat and Prep: Preheat your oven to 425°F . While it’s heating up, pat the chicken thighs dry with paper towels.
  • Season the Chicken: In a bowl, toss the chicken thighs in the seasoning mix until they’re well coated.
  • Bake: Arrange the chicken thighs on a baking sheet lined with parchment paper or foil on a wire rack. Bake for about 25-30 minutes, or until the chicken is golden and slightly charred. The internal temperature should reach 165°F .
  • Make the Green Sauce: While the chicken is baking, prepare the green sauce. In a blender or food processor, combine all the ingredients and blend until smooth and creamy. Adjust the seasoning to taste.
  • Serve: Once the chicken is done, let it rest for a few minutes. Garnish with green onion, then, serve it topped with a generous dollop of the green sauce. Pair with rice, quinoa, or a simple salad for a complete meal.
