For the salad:
- 12 oz rotini pasta cooked and cooled
- 1 cup sweet corn fresh, canned, or frozen and charred in a skillet
- ½ cup finely diced red onion
- ¼ cup chopped green onion
- ¼ cup chopped fresh cilantro
- ¾ cup crumbled cotija cheese
- 1 to 1½ cups chopped store-bought fried chicken tenders optional but highly recommended
For the dressing
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 garlic clove finely grated or minced
- ½ teaspoon smoked paprika
- ½ teaspoon chili powder
- ½ teaspoon Tajín plus extra for garnish if you like
- Juice of 1 lime
- Salt and black pepper to taste
