Ingredients

For the salad:

  • 12 oz rotini pasta cooked and cooled
  • 1 cup sweet corn fresh, canned, or frozen and charred in a skillet
  • ½ cup finely diced red onion
  • ¼ cup chopped green onion
  • ¼ cup chopped fresh cilantro
  • ¾ cup crumbled cotija cheese
  • 1 to 1½ cups chopped store-bought fried chicken tenders optional but highly recommended

For the dressing

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 garlic clove finely grated or minced
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ½ teaspoon Tajín plus extra for garnish if you like
  • Juice of 1 lime
  • Salt and black pepper to taste
