Four Ingredient Chicken Thighs

These crispy and juicy chicken thighs are a must-have in your dinner arsenal. With just four ingredients, they are guaranteed crispy and juicy every single time.

Ingredients

  • 4 organic bone-in chicken thighs
  • 1 tbsp olive oil
  • 2 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tsp Italian seasoning blend or herbs de provence

Instructions

  • Clean and pat dry chicken thighs with paper towels and place on a plate or in a bowl
  • Drizzle chicken with olive oil and season chicken liberally with salt, pepper and herb de provence
  • Massage the chicken with the seasonings being sure to get the seasoning all over the chicken thighs and under the skin
  • To a cast iron skillet, add a drizzle of oil and pan-sear chicken thighs for 5 minutes per side on medium high heat
  • Finish cooking the chicken thighs in the oven at 450 degrees for 15 minutes until fully cooked through and internal temperature has registered 165 degrees F

Notes

Cook time will vary based on the size of your chicken thighs--larger chicken thighs will take longer, up to an hour. Use a meat thermometer to be sure and when juices run clear when meat is pierced with a fork it's done! I don't recommend boneless thighs for this method.
