Ingredients

  • ¼ cup cottage cheese
  • cup liquid egg whites
  • cup all-purpose flour
  • tablespoons bread flour
  • 1 teaspoon baking powder
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • Pinch red pepper flakes
  • ½ cup finely chopped kale or spinach* optional
  • fat pinch of salt

Toppings

  • cup marinara sauce
  • ½ cup Italian cheese blend
  • Fresh basil for serving
  • garlic herb butter for the crust

Instructions

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • In a medium bowl, combine the cottage cheese, egg whites, both flours, baking powder, oregano, garlic powder, red pepper flakes and salt. Mix everything together with a fork until smooth. The batter will be thinner than traditional pizza dough—that's exactly what you want.
  • Pour the mixture onto the prepared baking sheet and spread it into a thin circle or oval, about ¼-inch thick. It will be sticky, don't worry.
  • Bake for 10 minutes.
  • Remove the crust from the oven and carefully peel it away from the parchment paper before placing it back onto the baking sheet.
  • Spread the marinara sauce evenly over the crust and top with chopped kale then top with the Italian cheese blend.
  • Return to the oven and bake for another 10 minutes, or until the cheese is melted, bubbly, and the edges are beautifully golden.
  • Finish with fresh basil, slice, and enjoy immediately.
