To a bowl, combine the olive oil with garlic, herbs, honey, lemon juice and seasoning
Mix well until a marinade forms
Add chicken thighs to the mixture and coat well, ensure the marinade gets under the skin of the chicken as well
To a baking dish, at lemon slices on the bottom in an even layer
Top with chicken pieces and pour excess marinade on top of the chicken
Finish the chicken with a little lemon zest for an extra punch of flavor
Bake in the oven on the top rack, uncovered, for 50 minutes or until chicken is cooked through and golden brown on top
Remove chicken from the oven and baste with gravy and serve warm
Notes
If you don't like a punchy lemon flavor, don't use the lemon zest and omit cooking the chicken on top of the lemons, the lemon juice in the marinade gives a nice subtle lemon flavor without it being too bold
