Ingredients

  • 6 bone in chicken thighs trimmed of fat
  • 2 lemons thinly sliced
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 2 tbsp freshly chopped herbs basil, parsley, rosemary, thyme
  • 1 tbsp garlic minced
  • 1 tbsp honey
  • 1 tsp garlic powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/3 cup olive oil

Instructions

  • Heat oven to 375 degrees
  • To a bowl, combine the olive oil with garlic, herbs, honey, lemon juice and seasoning
  • Mix well until a marinade forms
  • Add chicken thighs to the mixture and coat well, ensure the marinade gets under the skin of the chicken as well
  • To a baking dish, at lemon slices on the bottom in an even layer
  • Top with chicken pieces and pour excess marinade on top of the chicken
  • Finish the chicken with a little lemon zest for an extra punch of flavor
  • Bake in the oven on the top rack, uncovered, for 50 minutes or until chicken is cooked through and golden brown on top
  • Remove chicken from the oven and baste with gravy and serve warm

Notes

If you don't like a punchy lemon flavor, don't use the lemon zest and omit cooking the chicken on top of the lemons, the lemon juice in the marinade gives a nice subtle lemon flavor without it being too bold
