Hubby's Favorite Sunday Chicken

My hubby's favorite Sunday chicken is tender, flavorful and melt in your mouth delicious--it's the perfect dish to prepare for your family to love on Sunday too.

Ingredients

To season chicken

  • 1 whole chicken cut up or 2-3 lbs of dark meat pieces legs, wings, thighs
  • 1 tbsp of olive oil
  • 1 tbsp poultry seasoning
  • 1 tbsp of onion powder
  • 1 tbsp of garlic powder
  • 1 tbsp smoked paprika
  • 1/2 tsp of cinnamon
  • Kosher salt and pepper to taste about 1 tsp of kosher salt per pound of chicken

For gravy

  • 1 small white onion chopped
  • Drippings from cooked chicken
  • 2 tbsp of flour
  • 2 tbsp of butter

Instructions

To bake chicken

  • Heat oven to 325 degrees
  • Season chicken in a bowl, then and add chicken to roasting pan in a single layer
  • Cover and bake for one hour at 325 degrees
  • After one hour, remove foil from baking dish and cook chicken uncovered at 375 degrees for one more hour

For Gravy

  • In a skillet, melt butter and sautee chopped onions for 2 minutes until soft and fragrant
  • Next, and add flour and stir for 2 minutes to cook off raw flour taste
  • Slowly pour chicken drippings from pan while mixing
  • Bring to a simmer for another 2-3 minutes on medium heat and taste for salt. You want the gravy to be thick and creamy
  • Gravy is done when it’s velvety smooth and semi thick

To finish chicken

  • Pour onion gravy all over the chicken and mix well
  • Reassemble chicken into a single layer  and broil uncovered on high for 2 -3 minutes until skin of chicken is crispy and slightly charred * optional
  • Chicken is done when skin has a nice golden brown char and sauce has thickened

Notes

You can cut down the time of this dish by simply baking it at a higher temperature, 425 for one hour or until internal chicken temperature registers 165 degrees. Then proceed with gravy to finish. If you use wings, this dish is even faster, one hour tops! Enjoy!
