12Baby Yukon gold or russet potatoes
1tbspOlive oil
Kosher salt & black pepper to taste
1/2cupShredded cheddar cheese
1/3cupCooked baconcrumbled
Sour cream to taste
1Green onionchopped
Instructions
Prep the potatoes – Preheat your oven to 400°F. Cook potatoes in the microwave until tender and cooked through, about 5-8 minutes, depending on size.
Bake until crispy – Put cooked potatoes in a muffin tin and use a dipping sauce container to press down and create a hollow center in the potatoes. Use a brush to distribute olive oil on the edges of the potato and season to taste with salt and pepepr. Bake empty (without any fillings) for about 5-7 minutes until edges are slightly crispy.
Load them up – Sprinkle shredded cheese and bacon on each potato round, then return to the oven for a few minutes until the cheese melts.
Top & serve – Add a dollop of sour cream, a sprinkle of green onions, and any extra toppings you love. Serve immediately and watch them disappear
