Preheat the oven to 375°F. Grease an 8x8-inch baking pan and set aside.
Add the sage breakfast sausage to a skillet over medium heat. Cook, breaking it into crumbles, until browned and cooked through. Drain any excess grease.
In a large bowl, whisk together the 2 eggs, 3/4 cup milk, 1/2 cup cottage cheese, 1/3 cup maple syrup, 1 tablespoon brown sugar and 1 teaspoon vanilla bean paste.
Add 1 cup Krusteaz Buttermilk Pancake Mix and stir just until combined.
Fold in the cooked sausage and 1 cup shredded sharp cheddar cheese, making sure everything is evenly distributed.
Pour the batter into the prepared 8x8-inch baking pan and spread it into an even layer.
Bake at 375°F for 25–30 minutes, or until the edges are golden brown and a knife inserted into the center comes out clean.
Let the casserole cool for about 5 minutes, then slice into squares and serve warm with extra maple syrup drizzled over the top.
