Mini Turkey Meatloaf with Onion Gravy

Ingredients

  • 1 lb ground turkey
  • 1 egg
  • 1/2 cup seasoned panko breadcrumbs
  • 1/2 white onion grated
  • 1 tbsp fresh parsley chopped
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire
  • 1 tbsp soy sauce
  • 1 tbsp sriracha
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Kosher salt and black pepper to taste
  • Olive oil for searing

For onion gravy

  • 1 tbsp butter
  • 1 tbsp flour
  • 1/3 cup chopped onions
  • 1 cup chicken stock
  • Kosher salt and pepper to taste

Instructions

  • In a bowl combine all the ingredients and combine well by hand
  • Form into a medium meatball shape and slightely flatten, to create a flattened meatball
  • Gently coat in additional panko breadcrumbs for a crispy exterior *optional
  • Heat nonstick skillet to medium heat and add olive oil or any neutral cooking oil
  • Sear mini meatloafs in pan for 3-5 minutes per side on medium heat or until golden brown and interior of meatloaf is cooked through
  • Remove meatloaf from the pan and remove any excess oil

For onion gravy

  • In the same skillet, remove any burnt breadcrumbs by wiping pan clean, then add butter
  • Once butter is melted, add chopped onions and saute until fragrant, about one minute
  • Add flour and mix well for about one minute to combine and remove raw flour taste
  • Next, add chicken stock to deglaze the pan and bring to a simmer, continue mixing to avoid clumps
  • Gravy is done when it's nice and smooth and slightly thickened
  • Season to taste with salt and pepper at the end to avoid an overly salty gravy
