Mini Turkey Meatloaf with Onion Gravy

- 1 lb ground turkey
- 1 egg
- 1/2 cup seasoned panko breadcrumbs
- 1/2 white onion grated
- 1 tbsp fresh parsley chopped
- 2 tbsp ketchup
- 1 tbsp Worcestershire
- 1 tbsp soy sauce
- 1 tbsp sriracha
- 1 tsp garlic powder
- 1 tsp onion powder
- Kosher salt and black pepper to taste
- Olive oil for searing
For onion gravy
- 1 tbsp butter
- 1 tbsp flour
- 1/3 cup chopped onions
- 1 cup chicken stock
- Kosher salt and pepper to taste
In a bowl combine all the ingredients and combine well by hand
Form into a medium meatball shape and slightely flatten, to create a flattened meatball
Gently coat in additional panko breadcrumbs for a crispy exterior *optional
Heat nonstick skillet to medium heat and add olive oil or any neutral cooking oil
Sear mini meatloafs in pan for 3-5 minutes per side on medium heat or until golden brown and interior of meatloaf is cooked through
Remove meatloaf from the pan and remove any excess oil
For onion gravy
In the same skillet, remove any burnt breadcrumbs by wiping pan clean, then add butter
Once butter is melted, add chopped onions and saute until fragrant, about one minute
Add flour and mix well for about one minute to combine and remove raw flour taste
Next, add chicken stock to deglaze the pan and bring to a simmer, continue mixing to avoid clumps
Gravy is done when it's nice and smooth and slightly thickened
Season to taste with salt and pepper at the end to avoid an overly salty gravy
