Ingredients

  • Chicken Thighs or drumsticks: 6-8 pieces
  • 1 can Coconut Milk
  • 2 cups Jasmine Rice
  • 1 tbsp mined garlic
  • 1/2 yellow pepper finely chopped
  • 1/2 green pepper finely chopped
  • 1 tbsp soy sauce
  • 1 tbsp Brown Sugar
  • 2 tbsp Butter
  • 2 cups Chicken Broth
  • 2 tbsp olive oil 1 tbsp for seasoning chicken, 1 tbsp for searing chicken

To Season chicken

  • 1 1/2 tsp Smoked Paprika
  • 1 1/2 tsp Italian Seasoning
  • 1 tsp Onion powder
  • 1 tsp Garlic Powder
  • Salt and pepper to taste

Instructions

1. Sear the Chicken:

  • Heat vegetable oil in a large pot or Dutch oven over medium-high heat.
  • Season the chicken well, drizzle with olive oil, then sear on both sides until golden brown.
  • Remove the chicken and set aside.

2. Prepare the Aromatics:

  • In the same pot, add a bit more oil if needed.
  • Sauté the aromatics until fragrant, about 1-2 minutes.

3. Combine Ingredients:

  • Add the jasmine rice to the pot and stir to coat with the aromatics mixture.
  • Pour in the coconut milk, chicken broth, soy sauce, and brown sugar. Stir to combine.
  • Add in the butter.
  • Nestle the seared chicken pieces back into the pot, ensuring they are partially submerged in the liquid.

4. Simmer and Cook:

  • Bring the mixture to a slight simmer, then turn off the heat and remove from the stove.
  • Cover the pot and finish cooking in the oven at 375°F for another 35-45 minutes.

5. Serve:

  • Remove from the oven and serve.

Notes

Pls note this isn't a traditional super sweet sticky rice. The addition of the coconut milk and brown sugar gives subtle sweetness and you can omit the brown sugar all together to keep the flavor more mild. The stickiness is also just the rice clumping together a tiny bit from the coconut milk and broth and cooking method, not overly sticky! Just wanted to clarify incase you're a true sticky rice fan.
