Ingredients

  • 12 chicken drumsticks organic if you can find it
  • 3-4 cloves of garlic minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/4 cup fresh parsley finely chopped
  • 2 tablespoons olive oil plus more to get a loose consistency to the marinade
  • 2 tsp kosher salt
  • 1 tbsp adobo seasoning
  • 1 tbsp maggie seasoning *optional
  • 1 tbsp ALDI Salt Free Table seasoning blend *optional
  • Optional: red pepper flakes for some heat

Instructions

  • Preparation is Key: Start by patting the chicken drumsticks dry with paper towels. This ensures that the marinade sticks well to the chicken and promotes even cooking.
  • Marinade Creation: In a bowl, combine the minced garlic, lemon zest, lemon juice, chopped parsley, olive oil, salt, adobo seasoning, maggie seasoning and aldi salt free blend seasoning. Mix these ingredients together to form a flavorful marinade. You can also pulse everything together in a mini food processor if you have it!
  • Marinating Process: Place the chicken drumsticks in a large resealable plastic bag or a shallow dish. Pour the marinade over the drumsticks, ensuring that each piece is well-coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 2 hours up to overnight, allowing the flavors to infuse into the chicken. You can also bake right away if desired
  • Preheat the Oven: Preheat your oven to 375°F. Line a baking sheet with aluminum foil or parchment paper for easy cleanup.
  • Drumsticks on Display: Take the marinated drumsticks out of the refrigerator and let them come to room temperature for about 15-20 minutes. This helps them cook more evenly.
  • Baking Brilliance: Arrange the drumsticks on the prepared baking sheet, leaving some space between them. This ensures that they roast evenly and achieve that coveted crispy texture.
  • Oven Roasting: Place the baking sheet in the preheated oven and let the drumsticks roast for about one hour. Halfway through cooking, turn the drumsticks over to ensure even browning on both sides.
  • Checking Doneness: The internal temperature of the chicken should reach 165°F (74°C) when measured with a meat thermometer. Additionally, the drumsticks should have a golden-brown hue and a crisp skin and appear to be pulling apart from the bone. If more time is needed, cook for an additional 10-20 minutes.

Notes

Keep in mind you do not have to marinate the chicken--you can cook right away!
Convection setting on the oven will roast the chicken quickly--use that setting if you have it!
