Quick One Pot Veggie Lo Mein

A frozen veggie medley of choice, some lo mein egg noodles, and simple homemade sauce are the key components in this quick one-pot veggie lo mein recipe.

Ingredients

  • 8 oz Lo Mein noodles
  • 16 oz Frozen Vegetable stir fry medley
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Red Pepepr Chili Flakes
  • 2 tbsp Soy sauce
  • 1 cup Chicken stock
  • 1 tbsp Honey
  • Salt + Pepper to taste

Instructions

  • In a wok, add the frozen veggies and cook for 2 minutes or until veggies are thawed out and begin to cook.
  • Next, season the veggies with salt, pepper, onion powder, garlic powder, and red pepper flakes. Add soy sauce, chicken stock and honey then mix well.
  • Add in lo mein noodles (break into thirds depending on side of pan) and mix well.
  • Continue to mix until the noodles begin to soften (about 1 minute).
  • Allow the noodles to cook for about 5 minutes, stirring everything together occasionally, ensuring the sauce is not evaporating and nothing is sticking to the pan.
  • Sauce should begin to thicken and get richer as veggies and noodles soften.
  •  Once noodles are cooked to your liking, turn off the heat and serve.
  • Top with siracha or duck sauce to taste.
