In a wok, add the frozen veggies and cook for 2 minutes or until veggies are thawed out and begin to cook.
Next, season the veggies with salt, pepper, onion powder, garlic powder, and red pepper flakes. Add soy sauce, chicken stock and honey then mix well.
Add in lo mein noodles (break into thirds depending on side of pan) and mix well.
Continue to mix until the noodles begin to soften (about 1 minute).
Allow the noodles to cook for about 5 minutes, stirring everything together occasionally, ensuring the sauce is not evaporating and nothing is sticking to the pan.
Sauce should begin to thicken and get richer as veggies and noodles soften.
Once noodles are cooked to your liking, turn off the heat and serve.
Top with siracha or duck sauce to taste.
