Zuppa Toscana Soup
Welcome to my kitchen, where I'm about to share a recipe that's bound to become a family favorite - a homemade version of Olive Garden's famous Zuppa Toscana soup. This hearty and flavorful soup is sure to warm your heart and satisfy your taste buds. Plus, it's incredibly easy to make at home! Let's dive right in.
- 1 pound Italian sausage
- 1 large onion chopped
- 3 cloves garlic minced
- 4 cups chicken broth
- 3 large russet potatoes diced
- 2 cups kale chopped
- 1 cup heavy cream or milk to lighten it up
- Salt and pepper to taste
- 1 tsp all purpose seasoning
- 1 tsp Italian seasoning
- 1 tsp smoked paprika
- Red pepper flakes optional, for a little kick
- 1/3 cup parmesan cheese
- 1-2 cups of water
1. Cook the Sausage and Bacon:
In a large pot, cook the Italian sausage over medium heat, breaking it into small pieces. Once browned, remove the sausage and set it aside.
2. Sauté the Aromatics:
Add the chopped onion to the pot with the seasoning and continue to cook onion and sausage for about 3-5 minutes.
Stir in the minced garlic and cook for an additional 30 seconds, or until fragrant.

Add the diced potatoes to the pot and let them cook until tender, about 15-20 minutes.
Once the potatoes are cooked, add the chopped kale and cook for an additional 5 minutes, until wilted.
At this point you might need a little water, add 1 cup if needed
