Baked Swai and Vegetables in foil

This baked swai and vegetables in foil dish is not only quick and easy to prepare but it's packed with flavor.

Ingredients

  • 2 Swai Filets
  • 2 corn on the cobs thinly sliced into rounds
  • 1/2 cup of shredded carrots divided
  • 2 cups of fresh uncooked stir fried vegetables divided
  • 2 tbsp butter divided
  • 2 tsp old bay seasoning
  • 2 sprigs of fresh thyme
  • 2 tbsp olive oil divided

Instructions

  • Heat oven to 400 degrees
  • In a foil packet, gently place fish at the bottom and surround it with the vegetables and corn
  • Season with old bay to taste and place thyme and butter on top of filet
  • Drizzle olive oil over the fish and vegetables
  • Tightly close the foil shut by pinching the ends together, ensuring the fish and vegetables can steam in the oven
  • Repeat this step for the second foil packet
  • Place on a baking tray and bake on the middle rack for 15-20 minutes, depending on thickness of filet
  • Remove from the oven once cooking, carefully open foil *be careful the steam is hot!
  • Put the foil packet on a plate and enjoy!

Notes

You can use any fish of choice here, salmon is great but if you want another white fish try haddock, catfish, cod, snapper or sea bass
