Baked Swai & Vegetables in Foil

I love a good foil packet dinner. It’s easy to prep and versatile with the ingredients and you can throw it together in about 20 minutes. If you love outdoor grilling then this is also a great option to prepare for the grill as well. It’s a simple method that just requires some heavy duty foil that won’t break on you during the cooking process. From there you just need to select your ingredients and get to cooking.

I really wanted try this method with Branzino filets but my grocery store doesn’t carry them. I recently had it at a wedding and was blown away by the flavor. I asked the butcher what he had that was most similar to Branzino filet and believe it or not he said swai! I was really shocked just for the sticker price alone. Branzino is pretty pricey and swai is one of the most affordable fish types you can buy. I got a pound and it was less than $6.

According to, swai fish is an imported fish from Vietnam that has been growing in popularity in the United States. It is mild in taste and delicate in texture, with light flaky meat that melts in your mouth. Its appeal, as many would say, is attributed to it being an affordable substitute for expensive fish like haddock.

I would say it’s almost identical to haddock in look, taste and texture. I would not compare it to Branzino filet lol anywho, my husband and I really enjoyed it and thought that it was light and flavorful. What I liked most about the swai fish was how well it took on the flavors of the dish. I seasoned lightly with old bay and used some fresh thyme and butter on top and it complimented the fish beautifully.

In my foil packets, I used sliced corn, shredded carrots and a stir fry medley with snap peas, bell peppers, broccoli and onion. In my ingredient list I’m just going to list stir fry medley because you can literally use any vegetable of choice here.

This baked swai and vegetables in foil dish is not only quick and easy to prepare but it's packed with flavor.

Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes


  • 2 Swai Filets
  • 2 corn on the cobs, thinly sliced into rounds
  • 1/2 cup of shredded carrots, divided
  • 2 cups of fresh uncooked stir fried vegetables, divided
  • 2 tbsp butter, divided
  • 2 tsp old bay seasoning
  • 2 sprigs of fresh thyme
  • 2 tbsp olive oil, divided


  1. Heat oven to 400 degrees
  2. In a foil packet, gently place fish at the bottom and surround it with the vegetables and corn
  3. Season with old bay to taste and place thyme and butter on top of filet
  4. Drizzle olive oil over the fish and vegetables
  5. Tightly close the foil shut by pinching the ends together, ensuring the fish and vegetables can steam in the oven
  6. Repeat this step for the second foil packet
  7. Place on a baking tray and bake on the middle rack for 15-20 minutes, depending on thickness of filet
  8. Remove from the oven once cooking, carefully open foil *be careful the steam is hot!
  9. Put the foil packet on a plate and enjoy!


You can use any fish of choice here, salmon is great but if you want another white fish try haddock, catfish, cod, snapper or sea bass
