Blackened Shrimp Linguine

Ingredients

For the Blackened Shrimp:

  • 1 lb Large shrimp peeled and deveined
  • 1 tsp Smoked paprika
  • 1 tsp Cajun or Blackening Seasoning to taste
  • Kosher Salt to taste
  • 1 1/2 cup Heavy Cream
  • 1/2 cup Parmesan Cheese
  • 1 cup of pre cooked broccoli florets
  • 1/4 cup White Cheese Blend shredded
  • 2 tablespoons olive oil
  • 1 tsp Lemon juice to finish dish
  • 1 tbsp Fresh parsley for garnish

For the Linguine:

  • 12 oz Linguine pasta cooked al dente

Instructions

  • Cook pasta according to package instructions, drain and set aside
  • Season shrimp and sear on medium high heat with a little olive oil in a non stick pan
  • Sear on both sides for 2 minutes per side or until golden brown and blackened slightly
  • Remove shrimp and add onion, garlic and sun-dried tomatoes and more olive oil if needed
  • Saute until fragrant about 2 minutes and then add heavy cream
  • Bring heavy cream to a simmer on medium heat then add Parmesan cheese
  • Season to taste with more cajun seasoning and salt if desired
  • Add cooked pasta and broccoli and toss well until combined
  • Top with shreded white cheese and broil in the oven for 2 minutes or until golden brown and bubbly
  • Top with cooked shrimp and broil 1 more minute to bring shrimp to temperature
  • Top with lemon juice and fresh parsley to taste
