Candied Date Sweet Potatoes

Presenting my Date Candied Sweet Potatoes, sweetened to perfection with all-natural date sugar and date syrup.

Ingredients

  • 4 medium-sized sweet potatoes sliced in half length wise
  • 1/2 cup date sugar
  • 1/4 cup date syrup
  • 2 tablespoons olive oil for the skin
  • Kosher salt to taste for the skin
  • Optional: Chopped pecans or walnuts and cinnamon

Instructions

  • Preheat your oven to 400°F
  • Wash sweet potatoes, pat dry with paper towels and slice in half length wise
  • On a sheet tray top with parchment, add date sugar and top with date syrup then place sweet potatoes flesh side down on top of the mixture
  • Roast in the preheated oven for 50-60 minutes or until the edges are caramelized, and the sweet potatoes are fork tender
  • Optional: Sprinkle with cinnamon, chopped pecans or walnuts over the top during the last 10 minutes of baking for an extra crunch.
  • Remove from the oven, let them cool for a few minutes, and serve!
