Easy Homemade Peach Cobbler

This easy peach cobbler is sweet, buttery, and packed with juicy peaches in every bite. Made with simple pantry staples and a golden crust that bakes up soft and crisp around the edges, it’s the perfect quick dessert for any occasion. Equipment

  • 1 small cast iron skillet

Ingredients

Filling:

  • 1 29oz can of sliced peaches reserve half the juice
  • 1/3 cup brown sugar
  • 1/3 cup white sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp vanilla extract
  • 1 tsp whiskey or rum extract optional

Crust:

  • 1/2 cup self-rising flour
  • 1/3 cup white sugar
  • 1/2 stick butter, melted
  • 1/2 cup milk or enough to reach pancake batter consistency
  • Cinnamon sugar to taste for topping (optional)

Instructions

  • Preheat oven to 350°F.
  • In a small cast iron skillet, combine peaches (with half the juice), brown sugar, white sugar, cinnamon, nutmeg, vanilla, and whiskey if using and heat on medium heat until bubbly and fragrant, about 5 minutes.
  • In another bowl, mix self rising flour, sugar, melted butter, and milk until it resembles pancake batter.
  • Turn off the heat on the peach mixture and pour the batter on top of the peaches, do not mix.
  • Sprinkle cinnamon sugar on top if desired.
  • Bake for 30 minutes or until the crust is golden brown and the cobbler is bubbling around the edges.

Notes

Serve warm with vanilla bean ice cream and enjoy!
