Ingredients
Filling:
129ozcan of sliced peachesreserve half the juice
1/3cupbrown sugar
1/3cupwhite sugar
1tspcinnamon
1/4tspnutmeg
1tbspvanilla extract
1tspwhiskey or rum extract optional
Crust:
1/2cupself-rising flour
1/3cupwhite sugar
1/2stick butter, melted
1/2cupmilkor enough to reach pancake batter consistency
Cinnamon sugar to tastefor topping (optional)
Instructions
Preheat oven to 350°F.
In a small cast iron skillet, combine peaches (with half the juice), brown sugar, white sugar, cinnamon, nutmeg, vanilla, and whiskey if using and heat on medium heat until bubbly and fragrant, about 5 minutes.
In another bowl, mix self rising flour, sugar, melted butter, and milk until it resembles pancake batter.
Turn off the heat on the peach mixture and pour the batter on top of the peaches, do not mix.
Sprinkle cinnamon sugar on top if desired.
Bake for 30 minutes or until the crust is golden brown and the cobbler is bubbling around the edges.
