Ingredients
For chicken
2
large chicken breasts
cubed
1/2
a white onion
diced
1
tbsp
garlic
2
tbsp
butter
1
tbsp
olive oil
1
tsp
paprika
1
tsp
Italian seasoning
1
tsp
all purpose seasoning
Kosher salt and pepper to taste
For potatoes
4
small butter potatoes
cubed
1
tsp
kosher salt
1
tsp
Italian seasoning
1
tsp
paprika
1
tsp
all purpose seasoning
1
tbsp
olive oil
For homemade garlic parmesan sauce
1/3
cup
mayo
1/3
cup
parmesan cheese
2
tbsp
olive oil
1
tbsp
white wine vinegar
1
tbsp
lemon juice
Pinch
of sugar
Kosher salt
pepper and Italian seasoning to taste
To finish dish
1
cup
of shredded mozzarella & more parmesan if desired
Instructions
Season cubed chicken breast with a drizzle of olive oil and saute in a hot pan with butter and olive oil on medium heat until half way cooked
Add onion and garlic and continue to cook until chicken is tender and golden brown
While chicken is cooking, season and air fry potatoes until tender (air fry at 400 degrees for 15-20 minutes)
While potatoes cook, prepare garlic parmesan sauce by combining all ingredients into a small bowl and mixing well until desired consistency achieved
Combine chicken, potatoes and sauce and mix well
Top with mozzarella cheese and melt either on the stove with a lid or in the oven at 375 degrees for 5 minutes
Serve with your favorite veggie side and enjoy
