- 8 oz Gouda cheese cubed
- 1 large white onion thinly sliced
- 1 tbsp butter
- Pinch of salt
- 1/4 cup bacon jam or to taste
- Fresh thyme for garnish
- Crusty bread crackers, or fresh veggies for serving
Melt the butter in a medium skillet over medium heat. Add the sliced onions and a pinch of salt. Cook the onions, stirring occasionally, until they turn golden brown and caramelized. This will take about 25–30 minutes; lower the heat if needed to prevent burning.
Preheat your oven to 375°F. In an oven-safe dish like a mini cast iron skillet, add the cubed Gouda cheese.
Place the dish in the oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
Remove the dish from the oven and immediately dollop the bacon jam over the melted cheese and onions.
Sprinkle fresh thyme leaves on top for a pop of color and flavor. Serve warm with crusty bread, crackers, or fresh veggies for dipping.
