Greek Chicken Meatballs

Ingredients

For Meatballs:

  • 1 lb ground chicken
  • cup diced sun-dried tomatoes
  • ½ red onion chopped
  • 1 large egg
  • 1 tbsp garlic paste
  • ½ cup crumbled feta cheese
  • ½ cup panko breadcrumbs
  • Kosher salt & black pepper to taste
  • 1 tsp oregano
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Olive oil for searing

For the Sauce:

  • 2 tbsp butter
  • 1 tbsp garlic minced
  • ½ cup heavy whipping cream
  • ½ tsp oregano
  • Kosher salt & pepper to taste

Instructions

  • Mix the meatball ingredients – In a large bowl, combine ground chicken, sun-dried tomatoes, red onion, egg, garlic paste, feta, panko, and seasonings. Mix until just combined.
  • Form & sear – Shape the mixture into meatballs (about 1 ½ inches each). Heat olive oil in a pan over medium heat and sear the meatballs, turning until golden brown on all sides, about 6-8 minutes.
  • Make the sauce – Remove the meatballs and melt butter in the same pan. Add garlic and cook for 30 seconds until fragrant. Pour in heavy cream, season with oregano, salt, and pepper, and let simmer for 2-3 minutes.
  • Finish & serve – Serve hot over pearl couscous with fresh arugula on the side.
