For Meatballs:
1lbground chicken
⅓cupdiced sun-dried tomatoes
½red onionchopped
1large egg
1tbspgarlic paste
½cupcrumbled feta cheese
½cuppanko breadcrumbs
Kosher salt & black pepper to taste
1tsporegano
1tbspolive oil
½tspsmoked paprika
1tspgarlic powder
1tsponion powder

For the Sauce:
2tbspbutter
1tbspgarlicminced
½cupheavy whipping cream
½tsporegano

Instructions
Mix the meatball ingredients – In a large bowl, combine ground chicken, sun-dried tomatoes, red onion, egg, garlic paste, feta, panko, and seasonings. Mix until just combined.
Form & sear – Shape the mixture into meatballs (about 1 ½ inches each). Heat olive oil in a pan over medium heat and sear the meatballs, turning until golden brown on all sides, about 6-8 minutes.
Make the sauce – Remove the meatballs and melt butter in the same pan. Add garlic and cook for 30 seconds until fragrant. Pour in heavy cream, season with oregano, salt, and pepper, and let simmer for 2-3 minutes.
Finish & serve – Serve hot over pearl couscous with fresh arugula on the side.
