Hot Honey Peach Chicken Sandwich
This hot honey peach chicken sandwich is the ultimate summer lunch. Buttery toasted black pepper focaccia is layered with deli chicken, smoked mozzarella, pesto, yellow tomatoes, baby kale, sautéed peaches, and hot honey.
Servings: 1 Serving
- 1 black pepper focaccia roll or large sandwich portion sliced in half
- 1 tablespoon butter divided
- ½ ripe peach thinly sliced
- 2 tablespoons basil pesto
- 5 –6 ounces deli chicken breast thinly sliced
- 2 slices smoked mozzarella cheese
- 2 –3 slices yellow tomato
- Handful of baby kale
- 1 tablespoon hot honey
- Flaky salt and freshly cracked black pepper to taste
Melt ½ tablespoon butter in a skillet over medium heat. Add the sliced peaches and cook for 2–3 minutes, stirring occasionally, until softened and lightly caramelized. Remove from the skillet and set aside.
Add the remaining butter to the skillet. Place the focaccia cut-side down and toast until golden brown and crisp, paying special attention to the inside surfaces of the bread. The buttery toasted interior creates the perfect foundation for the sandwich.
Spread pesto on both toasted sides of the focaccia.
Layer the deli chicken onto the bottom half of the bread. Top with smoked mozzarella, softened peaches, yellow tomato slices, and baby kale.
Drizzle generously with hot honey.
Finish with flaky salt and freshly cracked black pepper, then top with the remaining focaccia.
Slice in half and serve immediately.
- Use a ripe peach that’s still slightly firm for the best texture.
- Smoked mozzarella is key—it adds richness and depth that balances the sweetness of the peaches.
- Yellow tomatoes are slightly sweeter and less acidic than red tomatoes, making them perfect for this sandwich.
- Don’t skip buttering the bread. The golden, crisp focaccia is what transforms this from a good sandwich into a great one.
