Hot Honey Peach Chicken Sandwich

- 1 black pepper focaccia roll or large sandwich portion, sliced in half
- 1 tablespoon butter, divided
- ½ ripe peach, thinly sliced
- 2 tablespoons basil pesto
- 5–6 ounces deli chicken breast, thinly sliced
- 2 slices smoked mozzarella cheese
- 2–3 slices yellow tomato
- Handful of baby kale
- 1 tablespoon hot honey
- Flaky salt and freshly cracked black pepper, to taste
Directions
Melt ½ tablespoon butter in a skillet over medium heat. Add the sliced peaches and cook for 2–3 minutes, stirring occasionally, until softened and lightly caramelized. Remove from the skillet and set aside.
Add the remaining butter to the skillet. Place the focaccia cut-side down and toast until golden brown and crisp, paying special attention to the inside surfaces of the bread. The buttery toasted interior creates the perfect foundation for the sandwich.
Spread pesto on both toasted sides of the focaccia.
