Pistachio-Crusted Salmon Recipe

Ingredients

  • 1 lb of salmon the belly portion
  • 1 cup shelled pistachios finely chopped
  • 1/4 cup panko breadcrumbs
  • 1/2 cup fresh parsley chopped
  • 1 lemon zested and sliced for presentation
  • 2 tablespoon whole grain mustard
  • 2 tablespoons honey
  • 1 tsp of your favorite seafood all purpose blend
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  • Preheat the Oven: Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  • Prepare the Pistachio Crust: In a bowl, combine the finely chopped pistachios, panko breadcrumbs, chopped parsley, lemon zest and one tbsp of olive oil. Mix well and set aside.
  • Season the Salmon: Season the salmon fillets with salt and pepper. In a small bowl, mix the mustard and honey together, then brush this mixture evenly over the top of each salmon fillet.
  • Crust the Salmon: Press the pistachio mixture onto the mustard-coated side of each salmon fillet, ensuring a generous, even coating.
  • Bake the Salmon: Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden and crispy.
  • Serve: Serve the pistachio-encrusted salmon with a squeeze of fresh lemon juice and your favorite side dishes.
