Today, I’m excited to share a dish that holds a special place in our hearts: Pistachio-Crusted Salmon. This wasn’t just a dish we served at our wedding—it was the dish my husband and I both chose to enjoy during our reception.
Our wedding day at the beautiful Park Chateau was filled with love, laughter, and incredible food. Amidst the opulent and lavish options, we wanted something light, flavorful, and easy to eat—something that would allow us to quickly return to the dance floor and mingle with our guests. The Pistachio-Crustd Salmon was perfect for this. Unassuming yet packed with flavor, it quickly became a standout dish.
Salmon is our favorite fish, and when dressed up with a crunchy pistachio crust, it transforms into a true knockout. Whether you’re a seafood lover or looking to impress your friends and loved ones, this dish is a must-try. Plus, it’s perfect for adding a bit of flair to your weeknight dinner lineup.
Pistachio-Crusted Salmon Recipe
Ingredients:
- 1 lb of salmon, the belly portion
- 1 cup shelled pistachios, finely chopped
- 1/4 cup panko breadcrumbs
- 1/2 cup fresh parsley, chopped
- 1 lemon, zested
- 2 tablespoon whole grain mustard
- 2 tablespoons honey
- Salt and pepper, to taste
- 2 tablespoons olive oil
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare the Pistachio Crust: In a bowl, combine the finely chopped pistachios, panko breadcrumbs, chopped parsley, and lemon zest. Mix well and set aside.
- Season the Salmon: Season the salmon fillets with salt and pepper. In a small bowl, mix the mustard and honey together, then brush this mixture evenly over the top of each salmon fillet.
- Crust the Salmon: Press the pistachio mixture onto the mustard-coated side of each salmon fillet, ensuring a generous, even coating.
- Bake the Salmon: Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden and crispy.
