Stuffed Sweet Potato with Ground Turkey

This stuffed sweet potato with ground turkey is a lighter twist on the viral sweet potato bowl trend. Made with lean Jennie-O® ground turkey, cheese, and taco toppings, it's an easy high-protein dinner the whole family will love.

Ingredients

  • 2 large sweet potatoes
  • 1 lb Jennie-O® Extra Lean Ground Turkey
  • 1 tbsp Olive oil
  • 1 packet taco seasoning
  • ¼ cup water, chicken stock or bone broth
  • 1 cup shredded cheddar or Mexican blend cheese
  • Optional toppings:
  • Diced avocado
  • Sour cream or Greek yogurt
  • Pico de gallo
  • Green onions
  • Jalapeños
  • Fresh cilantro
  • Hot sauce

Instructions

  • Preheat your oven to 400°F. Wash and dry the sweet potatoes, then place them on a baking sheet. Roast for 45–60 minutes, or until fork tender.
  • While the sweet potatoes cook, heat a large skillet over medium heat. Add olive oil and the Jennie-O® Extra Lean Ground Turkey and cook, breaking it apart as it browns.
  • Once fully cooked, stir in the taco seasoning and water. Simmer for 2–3 minutes, until the turkey is evenly coated and flavorful.
  • Slice each sweet potato down the center and fluff the inside with a fork.
  • Sprinkle cheese directly into the hot sweet potato and allow it to melt.
  • Top with the taco-seasoned ground turkey.
  • Finish with your favorite toppings such as avocado, pico de gallo, cilantro, Greek yogurt, sour cream, jalapeños, or hot sauce.

Notes

Feel free to saute the ground turkey with added aromatics like onions, peppers, shallots or garlic but if you're short on time skip it!
