I recreated the viral Cheesecake Factory Cajun salmon at home with a few pantry staples, and y’all… this was such a good dinner.

Now, before we get into the recipe, we have to acknowledge that Cheesecake Factory has had some of the best blackened salmon for a LONG time, way before social media ever entered the chat.

I remember going to Cheesecake Factory as a kid and thinking it was some of the best salmon I’d ever had. And honestly, that continued well into adulthood. Their menu is approximately 97 pages long lol, and somehow salmon has still always been one of my favorite things to order.

I would usually get it with mashed potatoes and spinach, or sometimes angel hair pasta. Then I moved on to the pastas and was stuck on the Louisiana Chicken Pasta for a minute. And don’t even get me started on the Shrimp Scampi.

Anyway, staying focused because you came here for the salmon!

You already know this dish has been having a MOMENT online, which is probably why you’re here. Maybe you came over after seeing my video tutorial, or maybe Google blessed me with you because you were genuinely searching for a Cheesecake Factory Cajun salmon recipe. Either way, welcome!

The good news is this recipe is actually really easy to recreate at home. You probably have most of what you need already, and once you make the Cajun cream sauce, everything comes together.

And apparently people have been having a hard time getting their hands on the restaurant version lately. How does salmon sell out?! I guess we have social media to thank for that one lol.

So, we’re making it ourselves.

Cheesecake Factory-Inspired Cajun Salmon

Serves: 3–4
Prep time: 30 minutes, including optional marinating
Cook time: 30–35 minutes
Total time: About 1 hour

Ingredients

For the Cajun Salmon

  • 1 pound skinless salmon fillets, cut into about 5-ounce portions
  • 1 tablespoon Cajun or blackening seasoning, plus more to taste
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Pinch of salt
  • 1 tablespoon olive oil, plus more for the skillet as needed

For the Creamy Mashed Red Potatoes

  • 1 pound small red potatoes, quartered
  • 1 tablespoon chicken bouillon, or enough to season the cooking water
  • 3 tablespoons unsalted butter
  • 1/3 cup heavy cream
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste

For the Cajun Skillet Corn

  • 1 (15-ounce) can corn, drained well
  • 1 tablespoon butter
  • 1/2 teaspoon Cajun seasoning, plus more to taste
  • Salt and black pepper, to taste

For the Sautéed Spinach

  • 8 ounces fresh spinach, or about 1 cup frozen spinach, thawed and drained
  • 1 tablespoon olive oil or butter
  • Salt and black pepper, to taste

For the Cajun Cream Sauce

  • 1 tablespoon butter
  • 1 tablespoon garlic paste or minced garlic
  • 1 tablespoon tomato paste
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Cajun seasoning, plus more to taste
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste

Instructions

1. Season the salmon.

Pat the salmon dry with paper towels and place it in a shallow dish. Season all over with the Cajun or blackening seasoning, onion powder, garlic powder and a small pinch of salt.

Drizzle with olive oil and rub the seasonings evenly over the salmon.

If you have time, let the salmon sit for about 30 minutes before cooking. This gives the seasoning a chance to settle in while also taking some of the chill off the salmon so it cooks more evenly.

2. Make the mashed potatoes.

Place the quartered red potatoes in a large pot and cover with water. Season the water with chicken bouillon and bring to a boil.

Cook until the potatoes are completely fork-tender, about 15–20 minutes depending on their size.

While the potatoes cook, combine the heavy cream and butter in a small saucepan or microwave-safe measuring cup and warm just until the butter melts. Don’t add cold cream and butter straight to your hot potatoes, we want them creamy!

Drain the potatoes well and return them to the warm pot. Mash with the warm cream and butter mixture, onion powder and garlic powder.

Season with salt and black pepper to taste. Add another splash of warm cream if you prefer your potatoes a little looser.

Cover and keep warm.

3. Make the skillet corn.

Melt the butter in a skillet over medium-high heat. Add the drained corn and spread it into an even layer.

Season with Cajun seasoning, salt and black pepper. Cook for about 5–7 minutes, stirring occasionally, until the corn is hot and gets a little color around the edges.

Remove from the skillet and set aside.

4. Sauté the spinach.

Heat the olive oil or butter in a skillet over medium heat. Add the spinach and cook until completely wilted and tender.

Season simply with salt and black pepper to taste. If you’re using frozen spinach, make sure you squeeze out as much excess moisture as possible before adding it to the skillet.

Set aside and keep warm.

5. Pan-sear the Cajun salmon.

Heat a large skillet over medium-high heat. Add a light drizzle of olive oil.

Once the skillet is hot, add the seasoned salmon. Let it cook undisturbed for about 3–4 minutes, or until you have that beautiful dark golden Cajun crust.

Flip and continue cooking for another 3–5 minutes, depending on the thickness of your salmon.

Cook until the salmon reaches your desired doneness of about145°F.

Transfer the salmon to a plate and let it rest while you make the sauce.

6. Make the Cajun cream sauce.

Reduce the heat under the same skillet to medium-low.

Add the butter, garlic paste and tomato paste. Stir and cook for about 30–60 seconds, allowing the tomato paste to deepen slightly in color.

Pour in the heavy cream and whisk until smooth. Add the Cajun seasoning, smoked paprika and a little salt and black pepper.

Let the sauce gently simmer for 2–3 minutes, then gradually stir in the Parmesan until melted.

Taste and adjust the Cajun seasoning as needed.

The sauce should be creamy, smooth and glossy but not super thick. You want it loose enough to pour generously over the salmon and potatoes. If it gets too thick, add a small splash of chicken broth to loosen it back up.

7. Plate it up.

Now for the fun part.

Add two generous dollops of mashed potatoes to each plate. Add the Cajun salmon, skillet corn and sautéed spinach.

Spoon that warm Cajun cream sauce all over the salmon, or over the entire plate if we’re being serious.

Serve immediately and enjoy!

A Few Tips Before You Make It

Don’t over-salt everything in the beginning. Cajun seasoning, chicken bouillon and Parmesan all bring salt to the dish, so taste as you go.

The tomato paste matters. Besides adding flavor, this is what helps give the Cajun cream sauce that beautiful warm orange-red color without making it taste like tomato sauce.

Keep the cream sauce pourable. We’re not making Alfredo here. The sauce should lightly coat a spoon but still easily pour over the salmon.

Use freshly grated Parmesan if you can. It melts much more smoothly into the cream sauce than pre-shredded cheese.

You can absolutely swap the sides. Angel hair pasta would be amazing here if you want to take this back to my childhood Cheesecake Factory order. The Cajun cream sauce with pasta? Say less.

The Final Bite

I completely understand why this salmon started trending because when you put everything together, the blackened salmon, creamy red potatoes, buttery Cajun corn, spinach and that glossy Cajun cream sauce, it really does give you that restaurant-style dinner at home.

But the best part is that none of the individual components are difficult. It’s really just about getting everything seasoned well and bringing it together on the plate.

So if your Cheesecake Factory is sold out, the wait is ridiculous, or you simply don’t feel like leaving the house, now you know what to do.

Make the salmon at home. And don’t be shy with that Cajun cream sauce.

For the Cajun Salmon

  • 1/2 cup freshly grated Parmesan cheese

  • Salt and black pepper, to taste

Instructions 

  • Season the salmon: Pat the salmon completely dry with paper towels. Season all over with 1 tablespoon Cajun seasoning, the onion powder, garlic powder and 1/4 teaspoon salt. Drizzle with 1 tablespoon olive oil and rub the seasonings evenly over the salmon. Let sit at room temperature for up to 30 minutes while you prepare the potatoes.
  • Make the mashed potatoes: Place the potatoes in a large saucepan and cover with cold water by about 1 inch. Add the chicken bouillon and bring to a boil over medium-high heat. Reduce to a steady simmer and cook until the potatoes are very tender and easily pierced with a fork, 15 to 20 minutes.
  • Meanwhile, warm 1/3 cup heavy cream with 2 tablespoons butter until the butter is melted. Drain the potatoes thoroughly and return them to the hot pot. Mash until mostly smooth, leaving some of the red skins throughout. Gradually stir in the warm cream and butter. Season with salt and pepper to taste. Add another splash of warm cream if needed to reach your desired consistency. Cover and keep warm.
  • Cook the corn: Melt 1 tablespoon butter in a large skillet over medium-high heat. Add the drained corn and season with 1/2 teaspoon Cajun seasoning and a pinch each of salt and pepper. Cook, stirring occasionally, until heated through and lightly browned in spots, 5 to 7 minutes. Transfer to a bowl and keep warm.
  • Sauté the spinach: Heat 1 tablespoon olive oil in the skillet over medium heat. Add the spinach a few handfuls at a time and cook, tossing frequently, until completely wilted, 2 to 3 minutes. Season with salt and pepper to taste. Transfer to a bowl and keep warm.
  • Sear the salmon: Wipe out the skillet if necessary and heat over medium-high heat. Add a small drizzle of olive oil if the skillet looks dry. Once hot, add the salmon presentation-side down. Cook undisturbed until deeply golden and blackened around the edges, 3 to 4 minutes.
  • Flip the salmon, reduce the heat to medium and cook until the center reaches 145°F, about 3 to 5 minutes more depending on the thickness of the fillets. Transfer to a plate and let rest while you make the sauce.
  • Make the Cajun cream sauce: Reduce the same skillet to medium-low heat. Add the remaining 1 tablespoon butter, garlic paste and tomato paste. Cook, stirring constantly, until fragrant and the tomato paste darkens slightly, about 1 minute.
  • Pour in the remaining 1 cup heavy cream and whisk until smooth, scraping up any flavorful browned bits from the bottom of the skillet. Stir in 1 teaspoon Cajun seasoning and the smoked paprika. Bring to a gentle simmer and cook for 2 to 3 minutes.
  • Reduce the heat to low and gradually stir in the Parmesan until melted and smooth. Taste and season with additional Cajun seasoning, salt and pepper as needed. The finished sauce should be smooth, glossy and pourable—not thick like Alfredo sauce. If it becomes too thick, whisk in chicken broth, 1 tablespoon at a time, until it reaches the right consistency.
  • Serve: Divide the mashed potatoes among plates, using about 2 generous scoops per serving. Arrange the salmon, skillet corn and sautéed spinach alongside the potatoes. Spoon the warm Cajun cream sauce generously over the salmon. Finish with chopped chives and a lemon wedge, if desired, and serve immediately.

Notes

For even more flavor, sear the salmon with a little butter in the pan and then baste it like you would steak! So tender and yummy
 
For the best color smoked paprika is my secret, you an even add a little to the salmon, but it’s all throughout the dish so use as desired.
