If you’re looking to shake up your Thanksgiving sides this year, say goodbye to the usual potato au gratin and hello to these delicious, crispy potato stacks with garlic herb butter. They’re fun to eat, easy to serve, and pack all the flavor you want in a side dish. Trust me, this one will make you wonder why you didn’t try it sooner.

I was inspired by Sonia of Salt and Pepper Here—she adapted her recipe from an old bonappetit mag mini herbed pommes annna recipe and transformed them into these beautifully layered stacks, each bite bursting with buttery, garlicky goodness. I credit her for this beautifully executed idea that I knew I had to recreate it with my own twist, perfect for a holiday spread. These stacks have that golden, crispy edge with a soft and creamy center—what’s not to love? My version has sweet, thinly sliced shallots to the mix and I used a rosemary instead of thyme. Simple changes but delicious flavor nonetheless.

Why You’ll Love These Potato Stacks with Garlic Herb Butter

These potato stacks are ideal for Thanksgiving if you want something a little more elegant than your usual mashed or baked potatoes. Plus, they’re individual portions, which makes them super easy to serve (and no fighting over who gets the crispiest part, because everyone does). They also bring a modern touch to a classic comfort food—perfect for impressing your family and friends. You can also assemble these potatoes the day before your dinner and bake them the next day!

The Secret: Garlic Herb Butter

The real star here is the garlic herb butter. I mean, who doesn’t love garlic and butter together? Throw in some fresh herbs like rosemary, and parsley, and you’ve got yourself a flavor-packed combo that takes these potatoes from simple to spectacular. Each layer of potato gets brushed with this golden, flavorful butter, making sure every bite is melt-in-your-mouth delicious.

Serving Tips

These stacks look just as good as they taste. Serve them in a pretty dish, or even better—place them right on the plate next to your turkey or ham. They hold their shape beautifully and make for an impressive side that doesn’t require any fancy plating skills.

Whether you’re making a full Thanksgiving spread or just need a killer side dish for a cozy dinner, these potato stacks will hit the spot. They’re hearty, comforting, and just the right amount of fancy.

Ingredients

For Garlic Butter

  • 1/2 cup salted butter
  • Handful of chopped parsley about 4 tbsp, roughly chopped
  • 2 tbsp garlic paste or freshly minced garlic
  • 1 medium shallot thinly sliced into rounds
  • Kosher salt and Black Pepper to taste

For potato stacks

  • 5-6 large Yukon gold potatoes thinly sliced using a mandolin
  • Enough Rosemary sprigs to fill your muffin tin about 12 pieces broken off the stem
  • 1/2 cup freshly shredded parmesan cheese
  • Cooking spray
  • Flaky salt to finish the dish

Instructions

  • Preheat the oven to 375°F .
  • Melt the butter in a small pan on low heat. Add parsley, garlic, shallots, salt, and pepper. Stir for 2-3 minutes, then set aside to cool.
  • Slice the potatoes thinly using a mandolin. Once the garlic butter has cooled, pour it over the potato slices and toss to coat.
  • Spray a muffin tin with cooking spray. Place a rosemary sprig at the bottom of each muffin cup.
  • Take a small handful of the butter-coated potato slices and stack them together to fit each muffin cup. Stack all the way to the top, as the potatoes will shrink in the oven. Sprinkle Parmesan on top.
  • Cover the muffin pan with foil and bake for 30 minutes until just about tender, then uncover and increase the oven temperature to 425 degrees and bake for another 15 minutes or until the edges of the stacks start to get golden brown
  • Let the stacks cool for a few minutes, then remove from the muffin tin. Flip them upside town to reveal a golden crust with a rosemary crust. Sprinkle with flaky salt and serve warm

Notes

Use a toothpick to test doneness of the the stacks and allow the butter to settle before removing from the pan
