Skillet-Roasted Lemon Chicken is exactly the kind of Sunday dinner I want to make when I’m craving something simple, comforting, and just special enough to make the end of the weekend feel like an occasion.

Last week, I talked about how sometimes, when you cook for a living, the last thing you want to do is come up with something new.

You just want someone to tell you what to make.

And coming off vacation this week, I’m still very much in that season because this Sunday, I went right back to Ina Garten and she gave me the inspiration I needed to make magic in the kitchen.

Last week it was her Chicken Thighs with Creamy Mustard Sauce. This week, I made her Skillet-Roasted Lemon Chicken, and once again, Ina did not disappoint.

There’s something about her recipes that feels made for Sunday dinner. They’re impressive without requiring you to spend your entire Sunday in the kitchen. The ingredients are familiar, the techniques are approachable, and somehow everything comes out feeling a little more special than the effort required.

This chicken is the perfect example.

The recipe starts with a whole spatchcocked chicken, which basically means the backbone is removed so the chicken can lay flat in the skillet. If you’ve never cooked a whole chicken this way, don’t let that part intimidate you. It actually helps the chicken cook more evenly and gives you that beautiful golden skin we all want.

And underneath the chicken is where all the magic happens.

Fresh lemon slices, onion, and garlic line the bottom of a cast-iron skillet before the chicken goes right on top. The chicken gets brushed generously with a mixture of olive oil, fresh thyme, fennel seeds, salt, and pepper before going into a very hot oven.

As everything roasts together, the lemons soften, the onions cook down, and all of those chicken juices drip into the bottom of the skillet.

Then comes the white wine.

Toward the end of cooking, dry white wine is poured into the skillet, where it mixes with the roasted lemon, onion, garlic, herbs, and all of those beautiful pan drippings. A final squeeze of fresh lemon juice goes over everything once it comes out of the oven.

And that’s really it.

No complicated sauce. No endless list of ingredients. Just really good chicken and a skillet full of pan juices that you absolutely want to spoon over everything on your plate.

A Few Changes I Made

I did make a few small substitutions to Ina’s original Skillet-Roasted Lemon Chicken recipe. I used butter to roast the chicken, which gave the skin that beautiful golden color and added even more richness to the pan drippings. While the chicken rested, I also took the sauce one step further and let everything cook down right in the skillet. I added a little Better Than Bouillon for an extra boost of savory flavor, then stirred in about a tablespoon of flour and a little more butter to thicken everything up. It turns those lemony pan juices into the silkiest, most flavorful sauce to spoon over the chicken. That little extra step was absolutely worth it.

That’s what I loved most about this Skillet-Roasted Lemon Chicken. It feels like the kind of dinner that could easily become part of your regular rotation.

It’s beautiful enough to put in the middle of the table when you’re having people over, but it’s also simple enough to make for your family on an ordinary Sunday.

And maybe that’s becoming my favorite part of this little Sunday Dinner series.

I’m not trying to reinvent dinner here.

I’m actually doing the opposite.

I’m letting myself cook recipes that have already been tested, loved, and made in kitchens over and over again. I’m learning from cooks I admire and remembering that not every meal I make needs to become something new.

Sometimes cooking can just be cooking.

You can put on some music, pour yourself a little of the white wine you’re using in the recipe, get your skillet going, and make something really good for the people you love.

No content strategy required.

No reinventing the wheel.

Just Sunday dinner.
