Creamy sun-dried tomato salmon with spinach
Ingredients
For Salmon
- 1 lb Atlantic Salmon cut in 3-4 individual portions
- 1/2 tsp Italian Seasoning
- 1/2 tsp Smoked Paprika
- 1 tbsp Olive Oil
- Kosher salt and pepper to taste
For Sauce
- 2 tbsp salted butter
- 1 tbsp olive oil
- 2 tbsp minced garlic
- 2 tbsp sun-dried tomato paste
- 1 1/2 cup of half and half or heavy cream
- 1/3 cup of grated parmesan cheese
- 2 cups of fresh spinach
- Salt pepper, smoked paprika and Italian seasoning to taste, about 1/2 tsp each
Instructions
- Season salmon filets with seasoning blend and drizzle with olive oil
- Massage the salmon and bklend seasoning into the fish
- Air fry salmon for 10-12 minutes (depending on thickness of filet) at 375, then set aside
- Melt butter in a non stick skillet over medium heat and add olive oil

- Mix well to combine and add heavy cream or dairy alternative like coconut milk or dairy free heavy cream
- Add parmesan cheese and mix well
- Once sauce begins to thicken, add spinach and give a good mix
