Poor Man’s Oysters Rockefeller
Ingredients
- 2 cans smoked oysters drained of oil
- 1 cup fresh spinach
- 1 tbsp garlic paste
- 1/4 cup whipped cream cheese softened
- 1/4 cup shredded Italian cheese blend
- 2 tablespoons butter
- 1/4 cup panko breadcrumbs
- Salt and pepper to taste
- Hot sauce to taste
- Cajun seasoning to taste
Instructions
- Prepare the Oysters: Open can and drain oil from the oysters really well and pat dry while keeping the oysters in the tin
- Prepare the Topping: Steam spinach in microwave for 30seconds. Then in a mixing bowl, combine the steamed spinach, softened cream cheese, and garlic. Season with salt and pepper to taste. Mix well until all ingredients are evenly incorporated.
- Assemble the Oysters: Using a spoon or a small knife, carefully mound a generous amount of the spinach and cheese mixture onto each oyster, covering it completely.
- Assemble the Oysters: Add 1 tbsp of butter to each tin along with some cheese and panko breadcrumbs
- Bake: Transfer the baking dish to an air fryer and cook for 5 minutes on 450 or until the topping is golden brown and bubbly, and the oysters are heated through.

I like to tell the truth lol this is a viral recipe I would not try again but I can see how my readers would enjoy it if they enjoy canned oysters. Two things can be true 🙂
