Today, I had the absolute pleasure of cooking live with the incredible Jasmine Rasco from the “Habits of a Goddess” podcast! Together, we conjured up a dish that’s not only absolutely delishh but also super nourishing, well balanced and healthy– introducing the Goddess Salmon Power Bowl!

The Magic Ingredients:

· Pan-seared salmon bites, cooked to perfection

· Fluffy white quinoa (a game-changer, trust us!)

· Protein-packed edamame

· Sweet and tangy pickled red onions

· Peppery arugula for an extra kick

· Spicy mayo to tie everything together

Ingredients

  • 1 lb salmon cut into bite sized portions
  • 1 tbsp trader joes salmon seasoning or any seafood seasoning of choice
  • 2 tbsp olive oil
  • 1 cup white quinoa
  • 2 cups bone broth
  • Choose toppings of choice:
  • Protein-packed edamame
  • Sweet and tangy pickled red onions
  • Peppery arugula for an extra kick
  • Cherry Tomatoes
  • Spicy mayo to tie everything together

Instructions

  • Pat salmon dry, cut into bite sized portions and season to taste with 1 tbsp of olive oil
  • Heat remaining tbsp of olive oil in a non stick skillet
  • Sear salmon bites for 3 minutes per side on medium heat or until golden brown on each side
  • Remove salmon from pan and set aside
  • Cook quinoa in a small sauce pan with bone broth and salt to taste
  • Assemble bowl by placing quinoa on the bottom, followed by salmon and desired toppings and dressing
