Recipe Description:
This Cheesy Hamburger Helper is a homemade version of the classic childhood favorite, made with fresh ingredients for a richer, creamier, and more flavorful dish that’s perfect for busy weeknights.


Ingredients:

  • 1 lb ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 sprig of fresh thyme
  • 2-3 cups beef broth (enough to submerge the noodles and beef)
  • 1 cup half and half or heavy cream
  • 1 1/2 cups elbow macaroni
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey jack cheese
  • 1/2 cup sour cream
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, for garnish (optional)

Instructions:

  1. Brown the Beef & Season: In a medium dutch pot over medium heat, brown the ground beef until fully cooked. Drain excess fat. Season the dish with powdered seasoning to taste and combine
  2. Cook the Aromatics: Add the diced onion and minced garlic to the skillet as well as the fresh thyme. Cook until the onion is soft and translucent, about 3-4 minutes.
  3. Add the Broth: Pour in the beef broth, stirring to combine. Bring the mixture to a simmer.
  4. Cook the Pasta: Add the elbow macaroni to the skillet. Stir to ensure the pasta is fully submerged in the liquid. Cover and cook for 10-12 minutes, or until the pasta is tender.
  5. Make it Cheesy: Once the pasta is cooked, Add in the cream and reduce the heat to low and stir in the shredded cheddar cheese and sour cream. Continue stirring until the cheese is fully melted and the sauce is creamy.
