Ingredients 

For the Cheese Chicken Wraps

  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon herbs de Provence
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • pinch red pepper flakes
  • 1 small pre-cooked grilled chicken breast, diced

For the Caesar Salad Filling

  • 1/2 Caesar salad kit
  • Extra parmesan cheese for topping
  • Fresh cracked black pepper, optional

Instructions 

  • Preheat oven to 425°F and line a baking sheet with parchment paper.
  • In a medium bowl, combine mozzarella, parmesan and seasonings.
  • Mix until the seasonings are evenly coated throughout the cheese mixture.
  • Divide the cheese mixture evenly into two circles on the parchment paper, spreading each one into a thin, even round similar to the size of a taco shell or small tortilla.
  • Top each circle evenly with the diced grilled chicken and grate fresh parmesan cheese on top of desired or sprinkle a little more mozzarella cheese on top
  • Place the baking sheet on the middle rack of the oven and bake for 10 minutes.
  • During the last minute of cooking, move the baking sheet to the top rack to help the edges get extra golden and crispy.
  • The cheese should be bubbly, deeply golden around the edges, and sturdy enough to hold its shape.
  • Allow the wraps to cool for about 5 minutes.
  • Using a knife, gently loosen the edges of each wrap from the parchment paper. Carefully lift the wrap with your hands and fold it into a taco shape while still slightly warm and flexible.
  • Prepare the Caesar salad kit according to package directions.
  • Fill the center of each taco shell with Caesar salad and top with extra parmesan cheese and black pepper if desired.
  • Serve the wraps in a taco holder to help them keep their shape while serving and eating.
