Instant Pot Collard Greens Recipe: A Quick and Flavorful Thanksgiving Side Dish

Ingredients:

1 large pre packaged bag of cut and cleaned collard greens 

1 medium white onion, chopped

1/2 a package of bacon, chopped

2 links of andouille sausage, chopped into half moons

1 small red bell pepper, chopped

1 small yellow bell pepper, chopped

1 bay leaf

1 tbsp of garlic paste

1 tbsp of smoked paprika

1 tbsp onion powder

1 tbsp garlic powder

1 tsp cajun seasoning

1 tbsp apple cider vinegar

1 tbsp of light brown sugar

2 bouillon cubes

1/3 cup of sweet Riesling white wine

Salt & pepper to taste

2 cups of hot water

Directions:

  1. Heat a large braising pot to medium heat
  2. Brown bacon & sausage for 5-7 minutes until crispy
  3. To the rendered fat add onions and bell peppers, sauté until fragrant, about 2-3 minutes
  4. Season with powder seasonings and mix well
  5. Deglaze with hot water and scrape all the brown bits off the bottom of the pan
  6. Add collard greens, garlic and bay leaf to the pan
  7. Cover the pan with a tight fitting lid and allow the greens to cook for about 3 minutes
  8. After three minutes, remove the lid and add white wine, apple cider vinegar, salt and pepper to taste
  9. Give it a stir and turn off the stove
  10. Transfer greens and liquid to instant pot and cook on high pressure for 15 minutes, natural release
  11. After natural release, remove the greens from the instant pot and allow the broth to reduce on simmer
  12. Add 1 tbsp of light brown sugar for optional flavor enhancement
  13. After about 5-7 minutes of reducing, turn off the instant pot sauté function and pour the broth back over the greens
  14. Serve warm & enjoy
