    • Warm the tortillas before rolling. This can be done by microwaving them for about 20-30 seconds with a damp paper towel on top or heating them on the griddle for a few seconds on each side.
    • Keep them covered with a damp cloth or paper towel to retain moisture until you’re ready to use them.
  3. Assemble the Taquitos:

  • 12 Corn tortillas
  • Sour cream for topping
  • Red pickled onions for topping
  • Sliced jalapeños for topping
  • Salt and pepepr to taste
  • Olive oil spray

Instructions

  • Heat your griddle to medium-high heat.
  • Cook the pre-chopped peppers and onions in a little olive oil until they are soft and slightly caramelized, add a little taco seasoning to the peppers for extra flavor
  • Season chicken with taco seasoning and a drizzle of olive oil, season with salt and pepper to taste and cook on the griddle (or stove) until the chicken is fully cooked and slightly crispy, you want a nice char on the outside of the chicken
  • Once chicken is cooked, dice the chicken into bite sized pieces
  • Mix the cooked peppers, onions, and diced chicken together on the griddle.
  • Sprinkle shredded provolone cheese over the mixture and let it melt, stirring occasionally to combine everything.
  • Place a spoonful of the chicken, pepper, and cheese mixture onto the center of each warm corn tortilla.
  • Roll the tortilla tightly around the filling and place it seam-side down on the griddle.
  • Spray with olive oil spray and let the taquitos cook until they are golden brown and crispy on all sides, turning occasionally to ensure even cooking.
