Ingredients

  • 1 lb salmon cubed
  • 1 orange juiced
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp white sesame seeds
  • 1 tbsp garlic
  • 1 tbsp olive oil
  • Kosher salt to taste
  • Black pepper to taste
  • 6 bokchoy leaves
  • 1/2 cup string beans chopped
  • 2 scallion cut into thirds
  • Parchment paper for cooking

Instructions

  • Heat oven to 400 degress
  • Cube salmon into 1 inch cubes and set aside
  • To a small bowl, combine orange juice, soy sauce, mirin, garlic, salt, pepper, olive oil and sesame seeds
  • Mix well and combine with salmon bites and toss to combine
  • Cut parchment paper into 2 large squares to place salmon and veggies in
  • Place veggies down first on the parchment paper then salmon bites on top, drizzle veggies with excess marinade
  • Tightly fold parchment paper and place on a baking dish
  • Bake packets on 400 degrees for 15 minutes
  • Remove and allow packets to cool then serve warm and enjoy
